The Cabin Pressure Way….

Cabin Pressure Spirits are a husband and wife team based in Horsham, West Sussex. Thinking there must be a way to produce a more flavoursome gin, David set about experimenting in the garden shed. A year later, it turned out he was right! The couple are now busy upscaling production, ready to share the results with gin lovers across Sussex. Read on to find out about the "Nano-Still", and how Cabin Pressure are using vacuum distillation to create   gin of the highest quality, available from the 18th March 2017.

Drop The Temperature….

Traditionally, gin is made by boiling a mixture of alcohol and botanical ingredients at high temperature. The botanical-infused vapour is then condensed back to its liquid form and bottled as gin.   Convinced there was a way to improve the flavour of their favourite tipple by avoiding violent boiling of the ingredients, Cabin Pressure borrowed an approach from the science lab to produce gin at a much lower temperature.   The result is an exceptionally smooth spirit with a superb depth of flavour.

We’re excited to announce that our bottle return scheme goes live this weekend.   Nobody wants to see our beautiful ceramic bottles going to waste when they’re tough enough to be used again and again, so bring your empty's back to Crates Local in Horsham and the ladies will reward you with a £1 discount on a replacement and a little something to garnish your G+T. The scheme will be running permanently so there's no need to rush.


The Nano-Still….

The Nano-Still developed by Cabin Pressure is built of laboratory grade borosilicate glass. A vacuum pump reduces the air pressure inside the still to a level similar to that experienced by Concorde at cruising altitude. Under these conditions, evaporation is more easily achieved and distillation can be carried out at close to room temperature. A beautifully crafted Dimroth condenser is cooled to -20°C to capture the precious liquid before it is lost to the atmosphere. Gently bathing the botanicals rather than violently boiling them helps preserve subtle flavours that would be lost using the traditional high temperature approach. It is this key factor that gives Cabin Pressure's vacuum distilled gin its distinctive flavour.


The Blending Process….

Another way Cabin Pressure go the extra mile to bring you a superior gin experience is by distilling all the botanical ingredients separately in the Nano-Still then blending them back together in exacting proportions. Individual runs from the "Nano-Still" are combined to create a 25 litre batch, which is then fine-tuned to ensure consistency. A single millilitre of distillate from a single botanical can be added if necessary to ensure the perfect blend every time.


Size isn’t everything….

The Nano-Still, with its tiny 2 litre capacity, is almost certainly one of the smallest in commercial operation anywhere in the world. The precision apparatus allows for unprecedented levels of quality control. The small batch method requires all botanical ingredients to be ground by hand in a pestle and mortar.   Not a single substandard cardamom pod or coriander seed is allowed to slip through the net. The botanical ingredients are left to infuse for periods of up to 48 hours before they are distilled, ensuring maximum flavour release.


Only the best….

As Cabin Pressure's vacuum distillation approach maximises the flavour that is released from each botanical ingredient, the full flavour results from just 6   carefully selected botanicals - fewer than many other gin brands. All ingredients are either organically cultivated or organic wild harvested. The alcohol used is also derived from organic grain.



Polish juniper imparts the freshness of pine to the gin while coriander yields both spicy and citrus notes. The unique flavour of Green Cardamom adds to the depth of flavour, with Angelica Root delivers further earthy tones. Ginger provides a subtle heat while Liquorice offers a mellow sweetness.

Interestingly there's no direct citrus component to Cabin Pressure Gin.


A sign of quality….

Every bottle produced by Cabin Pressure is finished by hand and presented in an elegant ceramic crock. Only when David is 100% satisfied does he individually number and wax seal each bottle. Ceramic is the ideal material for storing gin as it ensures a more stable temperature than glass and protects the gin from light.


When the gin runs out? We can and recycle....

Cabin Pressure Spirits believe that recycling is great, but reusing is even better. Because of this you will soon be able to return your bottles to us to be refilled with lovely gin again. There are also a huge number of ways of repurposing our crocks, from flower vases to rolling pins, candle holders to soap dispensers.
